Ingredients
175g plain flour
85g butter
2-3 tbsp. cold water
1 large leek
2 eggs, beaten
60g grated cheddar cheese
150ml milk
pinch salt
Method
1. Preheat oven 200oc /gas mark 6.Sieve the flour into a bowl. Add the butter and rub in until it becomes like breadcrumbs.
2.Sprinkle on the water and stir the mixture until it comes together. Press the pastry into a ball ,the bowl should be clean
On a lightly floured surface slightly flatten the pastry with your hand. Then roll out to form a rough circle about 3mm thick.
4. Cut the pastry circles out and put into a bun tin.
5. Fry the leek until it is soft. Mix the milk, cheese and eggs together and add the leeks {slightly cooled}.
6.Spoon the mixture into the cases. Bake in the oven for 15 minutes, remove from the oven and leave to cool before transferring onto a cooling rack.
You can also add bacon, tomatoes, onion etc...
